The 3 digits stamp you see is the decimal equivalent of the karat system. The karat gold purity system is 24 based and the common karat values are the number of gold parts out of 24.
For example, 9 karat means that 9 out of 24 parts of the alloy are pure gold and the decimal equivalence would be 9/24=0.375.
Hence, 9k and 375 stamps describe the very same gold alloy.

it's a percentage of gold mark which means the same as karat just done different in other countries. PS sterling silver is always .925 and pure is .999 Sterling has .075 copper added.

That has to do with the purity in normal silver jewelry.

Tiffany and Co jewelry has a different number that has to do with various aspects of their business like 1837, which is the year that the company was started and 730 which was the street address.

The three digits refer to the purity of the gold, e.g. 999 would be 99.9% pure.
