CD-R is short for "CD-Recordable". Recordable CDs are WORM (Write Once, Read Multiple) media that work just like standard CDs. The advantage of CD-R over other types of optical media is that you can use the discs with a standard CD player. The disadvantage is that you can't reuse a disc.
A related technology called CD-Rewritable (CD-RW) allows you to erase discs and reuse them, but the CD-RW media doesn't work in all players. CD-Rewritable drives are able to write both CD-R and CD-RW discs.

A cd-r is a one time use and works like the cds you buy at the store (except those ones already have music on them and usually u can't copy them). Cd-rw you can re-write and delete, because it has a chemical inside it (so don't worry if you break it!) which changes form if a laser shines on it. a cd-r is a cd rom which is different because it already has things installed on it. A cd-rw is a blank cd disk to burn either movies or music which you can learn yourself.

CD-R means recordable, can only be written to once (you can record multiple sessions though). Once you've written a file, you can't remove it.
CD-RW means rewritable, it means you can "erase" or write over things you've already written.
