How many colors should a professional pastel artist have, at a minimum, to get realistic professional results for drawing any and all types of subject matter? Is 24 or 36 enough, or should I get 48?

well, I would go with the 48 the more variety of colors will allow you to achieve greater tonality. But if you're also rendering portraits, I would suggest finding a skin-tone set, they're usually sold as a box of 12. Also if you find that one of your colors just isn't right, you can always buy individual pastels.

Ultimately its up to you get whatever set makes you comfortable, I'm sure people can create "realistic, professional results" with just a few pastels, usually their skill lies in blending the few-colors they have to make lighter tones and darker shades.

You really only need four
Cyan, Magenta, Yellow and Black.
Anything more than that is plenty.
