Go to a craft store and tell them what you are doing, they should be able to direct you. Scrapbook sections tend to have lots of Princessy paper for printing invites on or whatever else you need. They will have ton's of stuff though at the craft store. The ladies there will have lots of great ideas and they can show you how to do them. While, I think themed weddings are not a great idea, I am totally for themed Showers, as long as the theme does not take away from the sacredness of the event. I think the Princess theme is a great idea, since we all like to feel like a princess on our wedding day.

I'm assuming folks are coming in character outfits...
You can always have some rock throwing competitions, climbing... and of course some sort of fencing contest (loaves of french bread are pretty funny - the baguettes of course).
The surviving bread bits should go great with some Brie cheese.
Lots of baguette fencing... harmless, messy, and really befitting a film with the best choreographed fencing in films of the later half of the 20th century (if not ever...)
Oh, and require folks to say 'Hello. My name is Inigo Montoya. You killed my father prepare to die.' a lot...
And somebody - maybe you, needs to be the Grandfather/Narrator... I'd suggest it be you as the host... give you total control... might be fun to have somebody play Fred Savages part as well...
Damn - wish I could attend.

You should do audience participation like they do at Rocky Horror. Yell out the famous lines ("Inconceivable" "As you wish" "My name is Inigo Montoya..." etc) each time they occur. Throw rice (or blow bubbles) during the wedding scene.
Make up your own rules, too - hiss every time Humperdinck appears, yell "tramp!" every time Buttercup appears, slug the person to your left in the arm every time there's a fight scene, etc.

You can have darts...
throw them at a picture of Humperdink.
rein-act the sword fight of Wesley and Inigo.
I don't know...a Princess Bride party sounds inconceivable.
