I now understand what glycolysis is. But what organisms do alcoholic fermentation?

Yeasts break down carbohydrates to form alcohols. There are different kinds of yeast and you can get them at beer and wine making shops. In a pinch you can also use bread to get yeast from which is what is done in jail to make "spud juice". Sugar added to the mix increases the alcohol content. When the bubbling stops the fermentation has ended.
