The easter bunny is derived from a pagan symbol. The pagan festival of Ostara which was held around the same time as Easter (and where we get the name 'easter' from), was a celebration of spring, fertility, rebirth and new life; and the main sybol of this festival was the hare. Eggs were also a major symbol of fertility and birth, which is where our easter eggs come from.
When the Christians were attempting to convert Europe during the latter half of the first millenium, they held their own major celebrations at the same time as the festivals of Ostara and Yule, thus making it easier to convert people. Over time they began to deemphasise the pagan aspects, and turned the hare into a figure of ridicule, giving rise to the figure of the easter bunny we all know.
