Olive oil, as with any fatty substance, deteriorates during the cooking process especially if it is used over and over and if the cooking temperature is very high. High temperature destroys the good ingredients of any oil while it creates harmful agents for the liver, the arteries and the heart.
It is important however to take into consideration that these harmful agents are less likely to be created in olive oil than in all other known vegetable oils and this is because olive oil has a different composition. It contains a high percentage of oleic

according to my sufi teacher, who is somewhat of an expert on dietary issues, we need oil in our diet, but not COOKED OIL.
cooking oil causes it to create other compounds that are not good. yes, olive oil is better than other kinds. if you MUST cook with oil, it's probably the best. better to use olive oil in salad dressing or pour the oil over cooked food, but not actually cook the oil. cooked oil is not the best. but harmful is a relative term.
i do not favor cooked oil and would vote against it.

Olive oil is one of the best oils. It wont clog your arteries. Its very heart healthy. I use it on salads and while I'm cooking. Its not harmful at all.

Absolutely not! It is actually one of the healthiest oils you can use because it has a lower number of the bad fats and a greater number of the good fats compared to other oils. It is the oil preferred by all chefs and gourmet cooks.

No. It is among the BEST types of oil to use since it doesn't not contain bad cholesterol. I would use it ALL you can (but it is expensive and adds a distinctive flavor to the food as well.
