from 30 years of designing building and operating wooden ocean going sailing yachts I'd ask:

What waters are you going to operate in? Tropical? Winter North Atlantic?
What fishing method? Long line? Trawl? Beam trawl? Individual lines?
How long to and from the fishing grounds and what load do you ant to carry?

I recently rebuilt a 40' fishing boat; long lining and operating
no more than 50 miles off shore in tropical waters........hull was 3/4 inch Fiberglas, and if I was doing it in wood I would have done 2x3 oak frames on 12" centers and 1.25 planking.....same boat going off shore in Europe or New England in winter would be 4x4 frames on 12" centers and 2" planking........
