No simple answer, with our bodies height is the result of thousands of different processes that all need to work at their optimum for us to reach our potential height allowed by our genes. Further that genetic hight potential can be increased by drugs/hormones etc.

If any one of the processes is happening at below the optimum efficiency due to lack of one or more nutrient our growth will suffer.

For different individuals the specific process that is limiting our height is different. For some it may be calcium, others proteins, calories or any of the other essential vitamins or minerals.

In summary a well balanced diet with nothing missing will increase human height much better than a diet that provides a large amount of a specific nutrient.

In poorer countries where a large portion of the population is highly "stunted" the cause is often simple hunger in the childhood years, mainly lack of sufficient protein and calories for prolonged. That is rarely a problem in the modern "wealthy" world, where most of the time when someone does not reach their height potential it is due to lack of balanced diet of vitamins and minerals (although the effect is usually smaller than with hunger).

Illnesses and disease can also have a big impact on height, someone who is sick often or at crucial times in their lives, may not grow as fast or as tall.
