I have a Ph.D. in this field. I agree (in part) with the person who said it makes a great minor. I always tell people it's like a tortilla: okay by itself, really great as a foundation for another field. I am the only one of my class of undergrad majors who went on in this field. The person who pointed out that there are many,many subfields to pursue is also right. However, most Ph.D.'s I know are professors who do research on the side. As for me, over the years, I added degrees in Public Administration and health policy and now work for a public policy institute researching the impact of public programs. I use some of the interviewing and data analysis techniques I learned as a graduate student (they call it "qualitative research" out in the non-anthro world). Whatever you do, know that this is a wonderfully flexible choice for someone who is creative and curious. It will give you some excellent tools. Enjoy.
