I have come across an Escort with a "check engine" illuminated for the code "insufficient operating temperature for open loop operation", which means that the engine was unable to get warm enough to change the fuel trim strategy to USING the O2 sensors as one of the input. I would start with replacing the thermostat, and take it from there.

this did in fact happen to me in the past with my ford escort....it was an older escort but just the same.
How long before the engine light came on did you fill up with gas?
The reason I ask is that if you do not make sure that you click your gas cap on tightly (at least 3 clicks or more) then air gets caught in the fuel line and will cause the check engine light to come on.
Check that before you check anything else....it could save you a bunch of money.

The engine temperature sensor could be bad, that could be causing your temp Gauge to read wrong, and causing your check engine light to come on.

Take it to Autozone they will check your engine light for free. I would probably say your temp sensor is bad although a check engine light comes for emission reasons.

You probably need more anti-freeze....perhaps you need to change your oil, we need thinner oil in the winter. Does your heat work?
