Not sure what kind of holidays you like or where you are. if you like active holidays, take a look at http://whc.unesco.org/ for the World Heritage List for some ideas. The tour companies http://www.gapadventures.com/ and http://www.explore.co.uk/ may also give you some ideas. The Lonely Planet Blue List http://www.lonelyplanet.com/bluelist/ may also offer some ideas. If you like beaches, do a google search on best beaches.

With hostels, I tend to stay in Hostelling International http://www.hihostels.co.uk/ youth hostels. You know what service you are getting and it tends to be pretty good. The independants can be hit and miss. The site I have given you only allows you to book the major HI Hostels around the world. Speak to the UK Youth Hostel Association http://www.yha.org.uk/ as they used to sell a book with all the HI hostels arond the world.
