SMTP stands for Simple Mail Transfer Protocol. It is the standard protocol for sending out e-mail over the internet.

The compliment to the SMTP server is usually a POP3 or IMAP server which handles incoming mail.

When you use an e-mail client instead of web-based e-mail (like Eudora or Outlook instead of http://mail.yahoo.com for instance) you usually have to specify your SMTP server manually so your e-mail client knows which server to use when sending out e-mail. Same goes for your incoming mail server for receiving e-mail. So for example, your outgoing mail server might be set to smtp.mail.yahoo.com and your incoming mail server might be pop.mail.yahoo.com.

You can think of it as a post office, with the SMTP servers as the mail carriers bringing your letter to the post office. They also make sure the addresses on the letter are valid and then the letter is stored in the receiver’s mailbox. Then, when the receiver goes to retrieve the letter, they can use their POP3 (Post Office Protocol) server to fetch the letter from the mailbox.
