I think you are talking about what are called allotropes - different forms of the same element. Carbon is the big favorite since so many of us have watched Superman squeeze that lump of coal into a diamond. The three celebrated allotropes of carbon are:
1) diamond
2) graphite (like in a "lead" pencil)
3) Buckyballs or buckminsterfullerene which is a more or less recently discovered form of carbon where it is organized in large aggregates (60 carbons or more)

There are other forms such as coal or charcoal, but these are not crystalline, they are amorphous or without long range order.

Many other elements form allotropes, but as far as ones that form three, carbon might be the only one.

Oxygen - O2 and ozone - O3

Sulfur several modifications such as S and S8.

Theoretically ALL of the elements can exist as Solid, Liquid, or Gas.

If your question is which element has three different allotropes then:
a) Carbon exists as diamond, graphite and fullerenes
b) Tin exists as alpha tin (diamond-like structure), beta tin and gamma tin (both metallic in structure)
