Printer still use a little bit of color ink even when printing black. Don't worry about the color ink drying out as long as you use the printer regularly. Every time you turn on the printer it will go through a short cleaning process to clear out any remaining ink the nozzles the last time you use it, even if you don't use the color cartridges. During this short process the printer will use a little bit of ink in all cartridges, so there's no chance that your color ink will dry out.

The ink will dry up on the ports which will provide some protection. If you find you want to use it down the road, you may need to clean the ports off yourself if your printer doesn't have that option. If you never intend to use it, just leave in in there since it don't matter. It should last forever if you just need it as a place-holder.
