Some single people go out because the restaraunts are open and its easier than fixing a big dinner for one person. Some people are just too lazy to fix holiday dinner and dont care that others have to work on christmas day or thanksgiving day to cater to their laziness. I personally think all businesses should be required to close on thanksgiving day and christmas day.

I work for a 24/7/365 retail business and our stores were SWAMPED yesterday.. but I guess its just because the companies saw a need and met it. Now I'd like to not have to work on Holidays (I worked last night- Christmas Eve but have off today) but its a good time to make some extra money. Im sure that if we ALL didnt get stuck needing the last minute gift, tank of gas, loaf of bread or gallon of milk no one would have thought there was such a demand for places that dont close.

As far as going out to eat, my family might go out to breakfast after Church on Christmas but we have a big dinner at home. Some people probably dont have the room for the whole family at their place so gathering at a restaurant for dinner is a good thing.

Unfortunately - or perhaps fortunately - some professions, mostly having to do with entertainment, food and tourism, are working when others are on a holiday or when it is not working hours. The same applies for theatre actors - you don't suppose they like to spend all evenings at work, although we see it as entertainment for them it is work-, for people in touristic islands (they work hard in the summer, while the rest are on holidays), and resaturants, because eating out is a form of entertainment. This is a choice someone makes when choosing such a job. I for example was also working today, although I am a free lancer, but I had to finish a project by the end of the year, so I'll be working these days. that's life, you can't blame the people who go out and give you work, if the restaurant is open they go out and enjoy and pay!
