The adoption process makes them the parents!

Is this a child that your wife gave birth to and then gave up for adoption? If so, your wife is a legal stranger to the child and has no more rights to the child than I do. If the adoptive/legal parents do not want the child to have contact with your wife (or anyone else) they have the right to restrict that contact.

Once the child turns 18 and is an adult, she can decide who she wants to see and/or live with, even if the legal parents disagree.

Once a legal adoption has been granted, there is no way. The adoptive parents have all legal parental rights

Get an attorney. Although I am confused as to your relationship with the child, a child over about 11 in a custody conflict is usually allowed to participate significantly in a decision.
