The problem that you have is called "wicking". This is the same thing that happens when you set a cardboard box in a damp basement the moisture will "wick" up the sides. What happens when you clean is that you use a liquid cleaner to clean the stain. The carpet is clean, but under the carpet it is damp and the stain that remains under the carpet will rise up (wick) to the top of the carpet and the stain re-appears. The best way to correct this problem is to use a dry cleaning product. I recommend Capture, because it is dry it will not reactivate the stain under the carpet. However, when you have a professional clean the carpet it may reappear, just use the capture again if it does and that will fix the problem.

All these answers are right!
There are 2 main reasons for stains that keep coming back
1.Original stain is still deep in the carpet fibres. When it is gets wet it wicks up to the carpet surface, liquid evaporates and leaves the stain where you can see it.
2. Cleaning agent used to remove the original stain has not been removed and is now attracting dirt to that area of carpet.
How tell if your stain is 1 or 2 ? 1 usually occurs a few days after cleaning. 2 takes longer to develop a couple of weeks possibly.
You can treat both the same way -- a very light mist of water on the stain area then blot with a clean towel , repeat until area is dry. Takes time and patience to repeat every time the stain comes back but it will go forever if you keep doing it!

mix a tablespoon of white vinegar with eight ounces of water and pour it over the stain. Place a white towel folded over the mixture, then put a stack of heavy books over it. Leave it for a day and the weight will pull the stain out.

Stop using soap. Use water to get the soap out. You have left soap in there it is picking up the new dirt like a magnet.
