A good meeting place (for a drink or a meal) would be Harris Ranch. a hotel / restaurant oasis in the middle of nowhere...just about half-way on highway 5.

Halfway on 101 is about Paso Robles
Halfway on I-5 is Kettleman City ...
Neither has a lot to offer. Therefore, you should take the suggestion above, and meet at Harris Ranch, or if you want highway 101, meet in San Luis Obispo or Cambria.

The real scenic route is the 101 freeway also known as the 1. Yes it is a safe ride, mostly coastal driving. It adds hours to your trip but its a nice ride. There wil not be any snow, and maybe some rain but not storms. The wheter is typically calm in cali. The ride may take about 8 hrs. For overnight stops consider Santa Barbara, San Luis Obispo, or Montray Bay

coalinga distance wise is probably half way. but there is seriously nothing between bakersfield to modesto area.
paso robles is on 101 not 5.
