Has anyone taken this college course? Is it hard? I struggle in math, and i am taking this class next semester... how hard is this stat math class?

This has a lot to do with the place, the teacher, your level and the courses level.

The place: Is it a liberal arts or engineering school? The former would have easier statistics.

The teacher: Some allow formula sheets, some don't. Some allow calculators some don't. Some teach well, some don't.

Your level: Are you comfortable with looking at charts? Intro statistics usually only includes arithmetic, square roots, and squaring things, so if you are comfortable with this, the math is not hard. Upper level statistics using integration. Memorising formulas is a must to be able to do tests quickly.

Course level: Like I said above, some statistics only uses arithmetic but some will use calculus. Most likely, a statistics for behavioral sciences will not use calculus.

By looking at all these factors combined, you can judge if statistics will be hard for you.

OK!

Compared to a rigorous pure math course in complex variables or a physics course in the derivation of quantum mechanics, it is a snap!

It's really easy -- the easiest college math course I took, by far.
