If I've baked them I want them to be moist and soft. If I buy them from the store, I prefer crisp ones. This is mostly because the chewy store-bought cookies are often chemically altered to stay chewy, so they taste strange. And crisp cookies such as Oreos stay together when I dip them in milk. Which is a good test for the integrity of any cookie.
I can't believe I just wrote about the integrity. Of a cookie. Wow.
