I actually had charge of one of only three antique cracker presses when I lived in Massachusetts. Our town had one of the oldest functioning cracker factories in the country at that time and the Smithsonian sent the press to our school so I could make a set of blueprints for reproduction purposes. The press was round, of course, with spikes sticking down inside of it, that's what makes the holes in the crackers. Inside of the press was a counter weight. When the press is set into the dough, the outline cuts the cracker, just a a regular cookie cutter works. When the press is picked up, the weight slides down the spikes and pushes the cracker/dough out. The spikes allowed the dough to slide out easier. The dough is then baked and you get your cracker. The holes also allow the center of the cracker to cook at the same rate as the outside of the cracker. Now remember, this design was made over 200 years ago, but I believe they kept the original design of the cracker when they advanced with better technology. Those old-time founding fathers were really thinking if you look at it that way.
