Before the days of indoor plumbing, Tennessee had more outhouses per capita than any other state. Cleaning, or moving an outhouse can be a distasteful chore. No one wanted to handle the job of taking care of public toilets in villages and cities. People that volunteered to do this were considered heroes. Their status became legendary. Therefore, whenever you hear University of Tennessee fans, students, etc. proudly referrring to themselves as Volunteers; remember that they are engaging in self-praise, as outhouse workers.

Actually, the name is the University of Tennessee. The mascot is the Volunteer, and the teams are nicknames the Volunteers, based on Tennessee being nicknamed the Volunteer state.
According to the official web site of the state of Tennessee, the nickname the Volunteer State comes from the record number of volunteers the state provided during both the War of 1812 and the Mexican War.
50states.com is a bit more specific, and says that the name honors the bravery of the soldiers from Tennessee who served under General Andrew Jackson in the Battle of New Orleans, a U.S. victory during the War of 1812.
