Not sure what product you use but I've found that Norelco's Body Groom works VERY well for me.

I have been shaving my front & back door for over 20 years and I use a plain old Gillette razor and I shave dry. I have never experienced any problems and the hairless thing is much easier to keep clean. To those who say waxing, they are just plain crazy because that area is tender and it would hurt like hell.

It's easy. for many years now, I wait until they are long enough. Then after a good washing , - I LITERALLY GRAB THEM AND RIP THEM OUT FAST !!!
sure it stings a bit - but no other way to achieve these results.
And I rip them ALL out - all over the crack and the anus. it feels so clean when I'm done.
I use a mirror - but I can do it just on the FEEL of where I touch.
I let my nails get long and use my thumb & index finger to rip them out.
so get started and feel clean and smooth.

Increase the setting on your trimmer (if youre not using a trimmer) so that its not as short. That will fix a lot of the itching trouble.

um.. you should go to a waxer.
then go buy some itching cream at the drug store or ask your doctor for some.
