when i was younger i wasnt allowed to watch tv after the watershed why, what is the water shed?

Think about what watershed means -

1) A region of land within which water flows down into a specified body, such as a river, lake, sea, or ocean; a drainage basin or catchment basin.
2) The topographical boundary dividing two adjacent catchment basins.
3) (Canada, UK) The time after which material of more adult nature (violence, swear words, sex) may be broadcast on television or radio.
4) A critical point marking a change in course or development.

Each of the definitions above includes the idea of it being a kind of boundary, which is exactly what it is on TV - a boundary between family-friendly stuff and adult-orientated TV. The word probably started out life with just the geographical meanings and over time it has been used in other contexts too.

Sounds like its similar to the "family hour" on US stations, from 8pm to 9pm, where family friendly shows are supposed to be run. It was never a written regulation, but more of a "gentleman's agreement" between the networks. There were only three at the time. Cable television saw the beginning of the end of the family hour since cable shows were not bound by the same FCC regulations that ABC, CBS, and NBC were. When the networks started loosing rating, they threw the family hour out the window and began airing garbage like the rest of tv. If any network has a family hour now, it would have to be NBC, but they are filling their 8pm time slot with game shows, (Deal or No Deal, 1 vs 100, Identity). Not to come down hard on the networks, though, I do believe it is the parents responsibility to monitor what their children are watching.

That is what the tv watershed is - in the US it is called Safe Harbour

Whatever it was it doesn't exist any more. You can see violence and nudity, swearing, and all sorts at any time now. The barriers have been moved and will never return, hence the chav culture.
