This happened the other week. What I remember is that they have a pecking order where if the person in front gets injured, the person behind moves up. I think they have 2 line judges (one on each side of the field) so if one of the field judges gets injured, one of them gets promoted, and the other line judge can work alone.
I'm assuming that there are officials in the booth that can come down and work the field if necessary.
In the NBA, they normally run 3 ref's, two on each side of the ball like a moving triangle. If one gets injured, they switch to a 2 person rotation as a contingency plan.
