Twenty years ago a roommate had an album with a rendition of Birdland that I like. In it the singers used their voices to replace all of the instrumental accompanyment. It was very cool. I suppose it could have been by Weather Report but 20 years is a long time so I'm not sure. Does anyone know what album this was?

If it helps at all, I have the slightest impression that it was the second to last tune on the B side. I think it was just the tune and no lyrics as their voices were busy being trumpets and such.

The album you're looking for is Extensions. The song is 'Birdland' and it was in fact, a piece by Weather Report .

You're quite right that Manhattan Transfer sang a capella.
