The word "plastic" is from the Greek pastikos: shape. The modern compounds with the name "plastic" are so called because you can give them any shape you want. The adjective can be applied to anything which concerns the shape.

Plastic surgery is related to the shape of body parts.

Hence, Plastic Surgery, a process of molding into another shape.

Actually, we do use plastic in some areas. When we do a surgery that requires any type of implant, that implant is made of a plastic variant.....(ie. silicone)

i don't think it's plastic in the sense of the stuff that coke bottles are made of, i think it's more of an idea that you can mold yourself into something else...in other words using "plastic" as an adjective instead of a noun
