If not a nice gift certificate would work.
I sent my old teacher a nice candy/coffee mug display after 25 years just to say after all that time I still think of all he did for me.
His coworkers and students were very impressed. and showed all his hard work was not forgotten

Why not a subscription to a dirty magazine! As a professor myself I know I prefer dirty magazines over candy!
