what is the legal time to establish resedance in a house in reno NV. before the landlord has to go through the evection process??

If you don't pay your rent, you can be evicted. No time is required that I know of. Maybe I am missing something in your question. If you are renting on a monthly basis and have paid your first and last monthly payment, you probably can stay until you miss a payment.

There is no time period to establish residence, it's all down to intent.

The landlord can start eviction proceedings at any time that you violate the terms of your lease. It does not matter how long you have lived there.

I have to agree - if one of my tenants misses the second month's rent, I'll start eviction. Or, if they're doing something illegal at the home, even if I find it the day they're moving in, I'll evict and keep their money. Not to be a jerk, but I've got a lease that states you can't do illegal things, so they already know they're in the wrong.
