Due to the climate of their natural habitat, ie Hot, very sunny and dry, their tongues are prone to sunburn as they use them to wrap round leaves on high trees to pull them off - like an elephant does with it's trunk, therefore can be prone to sunburn. The pigment protects them from this.

Giraffes have spots covering their entire bodies, except their underbellies, with each giraffe having a unique pattern of spots. They have long, prehensile tongues that are distinctly blue-black to protect from sunburn.

I was told by a wise old Indian fellow that any creature with a purple tongue is pure of blood and should be feared and respected, I always thought they drank to much grape flavored Kool-Aid®.

Because their tongues spend a lot of time outside their mouths, stripping leaves. This exposes them to sunlight - they could get sunburned tongues!. The purple pigment is ultra-violet protection.

Maybe because their heads are so high its hard for blood to reach their heads, resulting in a "blue" or purple tongue. I guess their brains are purple too!
