I haven't seen the movie yet, but I'm curious why it's spelled this way.

Well if you're not going to see the movie, the answer is:

Will Smith is teaching his son to spell, and at the daycare he takes him to, "happyness" is spray painted on the wall outside, and he has to keep explaining to his son that it's misspelled.

there was a sign (I believe it was on the daycare center) that had the word happiness misspelled. It really bothered the protagonist - he was careful about spelling and didn't like the mistake. But the word still became a goal for him - to find 'happyness'.

I recently listened to an interview with the individual Will Smith plays and his response was the Y stands for your own pursuit of happiness, what it means to the individual to be happy.
