write your own or find online a beautiful poem write it in your handwriting on pretty stationary and put it in a frame.
make coupons and put them in a beautiful card...this coupon good for back rub,hair brushing,foot massage,etc etc be creative.
do u live together..make her a basket of things to have a wonderful bubble bath....bubble bath,candles,wine,loofa sponge
get her a beautiful photo album and write a note and placeit in the first page saying that you cannot wait to spend your life with her and fill this book with memories as beautiful as she is.

forget saving money get her something really good and when she says "we are supposed to save money" tell her, well i just love you to much and just want to best for you.....then start rippin off the clothes!!!hahah

get her a necklace - you can get a nice cheap one thats sterling silver maybe $20-25.
or some nice smelly lotions from bath and body works or victorias secret.
