There's a whole lot besides the tranny that would have to be replaced......computers, sensors, modules, etc. If the cars are the same year, it would make it much more likely.
I assume the SHO is wrecked?? It's a much hotter looking car.

It would cost you less to sell your Sable and buy a Taurus or Sable with the manual transmission installed, unless you can find all the parts in a junkyard and do the work yourself.
Check on E-bay and in the auto trader.
I would say that at $60 per hour, the job could cost around $3000.

If the car has a manual option - then usually fairly easy to convert - though you may also need to alter the rear diff (if rear wheel drive) as they tend to be different gearing ratios depending on auto / manual.
If the mercury is only available as an auto, then it can still be done but will require some custom work - so may well increas the cost rather more.
Eg: A Toyota Supra takes about 5 hours work to convert from auto to manual. Harder to do the other way around as you need to change the ECU if the autobox is electronically controlled.
Many autos are converted to manuals like this - if the car comes in both flavours it is usually no great job to do.

Richard E sounds about right, although info to Mark T, Taurus, and sable only came as front wheel drive models. do not forget to replace the E.C.M.(computer), as the operating parameters between auto, and standard, are different, and the vehicle will probably operate poorly if you do not do this. Also, some of the various sensors will in all likely-hood need to be interchanged too.

well, it can be done but you will need more than transmission. You will need clutch set up and the pressure plate. also some of the electrical hook up maybe different than what you had.also it would be best to pick a car that has the same other options (motor size, year, power options) and change the computer box as well.Today's cars work in line directly with the computer to all its components. any change and the computer may not work something correctly giving you major headaches.

It would be very hard, you would have to know metal fabrication. The tyranny would fit but then you would have to cut a hole in the floor for the shifter, run your Trans line thou the front of the firewall, then under the dash you would have to fab for the clutch mounting system, then the pedal
