how do i record emails/im's etc or my (most likely) cheating husband??? please answer ASAP

You can enable "History" on the most common IM clients. Then you can read what they have written later if you know where the file is stored, or access is through the IM program menus.
Email depends on the client, but if you use Yahoo mail you can configure the account to keep the sent files.
Maybe better to just ask him?

search the net for spy software, however be aware that it may not be legal to spy on someone.
