Pad Thai with marinated tofu instead of chicken or beef. Or maybe some Ekmek (Turkish flat bread) with hummus or baba ganoush and some cucumber salad.

vegie pita wrap. But pitas and put different vegies in it such as tomatoes, carrots, celery, lettuce. Shred some cheese and spread that on. Add whichevery type of sauce he likes ( I prefer to use ranch salad dressing.) On the side you can make pasta salad and mashed potatoes or glazed carrots. There's a lot of fun and tasty vegie dishes you can make!

Soy burgers or soy tacos...soy meat is a great alternative to beef. Everytime I attempt at eating beef, I always gag. The only real meat I can stand to eat is chicken.

Since it's winter, there are a ton of yummy squashes available now. Spaghetti squash is one of my favorites. Serve it with some marinara sauce, garlic bread, and a salad, and you have a complete meal.
