There are all kinds of awesome recipes at http://www.allrecipes.com

They have tips and tricks and all sorts of things. I would also say that sometimes it's the cookie sheet or you bake them too long maybe. Chewy cookies often seem to be not quite done in the center - that's what makes them chewy. I would try baking with parchment paper on the cookie sheets and take a couple out at the earliest time allowed and then maybe every minute after to the longest allowed and see if the timing helps.

Peace!

Use this trick for soft cookies..
DO NOT let them cool on the pan when you take them out of the oven... the pan is still hot so its still baking the cookies.... this is why it gets hard.

If you take them off the pan right away and on the cooling rack, the cookies are forced to stop baking and starts to cool... then you have soft cookies.

Works all the time for me. :-) Tasty soft!!!

Try mixing by hand if you're using a blender. I always had that w/ my chocolate chip cookies, then I switched to hand mixing and they're coming out soft now. It takes longer but it's worth it.
