ex. a bunch of people downloading at the same time through one router... could the service overload and shut down ?

nothing would shut down. as the bandwidth gets shared with all the computers on the network download/upload data rates will decrease substantially and there would most likely be a lot of time out errors.

using a switch instead of a hub would eliminate a lot of the overhead on the network

It won't shut down completely but it might seem like it as it slows to a crawl as bandwidth is shared. You might get timed-out too.

Try a switch instead of a router.
