yes, in photoshop you could use the magnetic lasso tool and delete the background, and after use the eraser and go around to touch it up. If you'd like to try something a little more challenging though, go to filter>extract. it's a little difficult to explain how to use it, but if you go to the help menu it will all be explained there.

Open both pictures in photoshop. Drag the layer from the picture with the person on it to the background picture. Hit ctrl+t, or go to free transform, and move or resize it. Hold shift when resizing it to keep the dimensions scaled. Hit enter when you've got it where you want it. Then click the button on the bottom of the layers palette that looks like a white circle in the middle of a black rectangle. Click the white box that appeared on the layer with person (on the layer, not the actual picture) and use the paint brush to paint everywhere you want to layer beneath to show up black and where you want the person white. Make sure the brush hardness isn't overly harsh or it'll look like a cut-out. You can always use free transform to move the person again if you need to.

hmmm.. its a little hard to explain over the net since i really dont know the correct term for the thingys. lets see you use the cut out pen. you can change it to magnectic. cut out the picture and it should follow the shape of the person. once its cut copy and paste it to whatever. hmmmm... get it?
