We had our beagle for Easter, and there are just a few tips:
1) THOROUGHLY clean him
2) try a light glaze of butter with onion or garlic. We mixed in a little Worchestershire, and it really didn't help the flavor much
3) bring the thickest, meatiest part to 350 for 40 minutes
4) make sure you let the kids have first choice of the leg meat. Our kids loved fighting over the leg bones.

I have you one better! Things were pretty tight last year, and was surely wondering what I could put on the table for the family supper. Not wanting to disappoint, there was some fresh kill on the side of the road, not more than 5 or 6 hours old. But no worries! Took him home to the missus, and after about 30 minutes we got all the gravel out. Sliced him up thin and dandy, soaked him in some milk, and put him on the barbie. Kids loved him! first meat we had in weeks! A bit gaseaous after, but just loosen the belt some, turn on the tellie, and we had ourselves a fine Merry Christmas.

If your dog's getting on a bit he might be a bit tough for roasting. How about a nice Jack Russell casserole? You could get one of those new Dog Tonight ready made sauces.
Don't forget to be careful when you skin him - you could make a nice warm fur hat for great aunt Flo.

Depends on the size of the Jack Rat but I'm guessing about 20mins per kilo plus 20mins on a moderate heat.
Usually have roast persian at christmas but Jack Rat's may be easier to come by this year.
Suggestion........ celebrate christmas in the new year though, there's always plenty of puppies in the rescue homes after christmas. Can pick a bundle up cheap!

Now i wonder what Santa will put in your stocking !!!!!!
By the way, an elderly Jack Russel is not fit to eat,
Trust me on this , however superb your culinary skills are
it will not be tasty in the slightest .
.
Look to an unfortunate, ' road kill' pheasant '/ or peasant depending on your taste , for your Yuletide repast
Have a Happy Christmas ,

About 4 hours to be safe, 5 if you cook from frozen.
You'll be able to make some socks with the fur, to keep your toes warm as you enjoy your lunch.
