Here are the instructions. I hope that they work for you.
Uninstalling Internet Explorer 7
To uninstall Internet Explorer 7 and restore Internet Explorer 6 when using Windows XP or Windows Server 2003
1. Click Start, and then click Control Panel.
2. Click Add or Remove Programs.
3. You might have to CHECK the box that says SHOW UPDATES
4. Scroll down to Windows Internet Explorer 7, click it, and then click Change/Remove.
If you cannot find Internet Explorer 7 in Add or Remove Programs, click Start, click Run, type
%windir%\ie7 \spuninst\spuninst.exe
(I added a space after ie7 so you could read the whole line)
and then press ENTER.
For more information, check this page at the Microsoft website. http://msdn2.microsoft.com/en-us/ie/aa740486.aspx
If you have further trouble, you might try the RESTORE thing in the System Tools folder and go back a few days before you made this terrible mistake.
Good luck and Happy Computing!

If you install IE7 it will replace IE6. If you want to uninstall IE7 at a later time, you should be able to remove it through the Add / Remove applet in the control panel. If you do install it and uninstall it later, the automatic updates will inevitably ask you if you want to install it again.
In that case, just select the Don't install option. Important: If you do want to remove IE7 after installation, make sure you uninstall it correctly through the Add/Remove applet in the control panel or with another uninstall utility. Do not delete it manually as that will cause more problems. Note that installation of IE7 will not override your default browser.
You then may have to manually add IE6. You can do this through the ADD/Remove applet

You only need to do a search on here to see how many people are having problems with IE7. The best thing to do is download Mozilla Firefox available from http://www.mozilla.com/ Its faster, more user friendly, easily customisable to suit your needs and no problems.

All you have to do is un-install it from you Add and Remove Programs list. Your old version will be back.
If the Menu Bar is what you don't like. Check out the link below. It is a tweak for your menu bar.
