Yes it can. When you eat a lot of carrots it will absolutely turn your skin orange. She needs to cut back on the carrots, seriously. I'm annoyed at all the people answering it won't when they clearly don't know.
Back to your wife, again, that many carrots throws the nutrient and vitamin balance off. She needs to back off and/or make sure she's eating other things too.

Paranoia is a far greater problem and in need of more attention than the discolored skin one gets from high intake of carrots.
2-3 carrots per day, seems a very low amount to have caused skin discoloration. Is she a very small person, does she have very little other food intake? There are many other issues to be examined that could be of greater concern. One can live reasonably well on solely carrots and carrot juice as a food source, but I do not recommend it as there are still some deficiencies that one might develop. Like one other writer suggested, perhaps her liver function should be checked. The carrots are not in themselves harmful, it may be other things that she is doing or not doing that are making this an issue.
Lose the harrassment. Lose the knickname. They are creating more problems, and helping none.

Yes. And overabundance of carrots could cause what is known as Carotenodermia which causes a yellowish/orange discoloration of the skin, most often occurring in the palms of the hands and soles of the feet as a result of high levels of carotene in the body; however 2-3 carrots a day is not an overabundance. She should go to the doctor and be checked out to be sure it isn't something more serious, such as a liver dysfunction.

I heard a news like that before and even watch the news on tv. A man who ate carrots got orange skin too.
Our skin color (melanin) is hereditary and sometimes change due to sun exposure or some beauty products. The foods we ate does reflect also to our body and health.
Im not an expert but I know carrots got this "thing" that can affect our skin color. Science can answer you for that, better ask your Doctor or some expert for more info. c")

After peeling a lot of carrots I have often noticed the skin on my hands have turned orange. It is the beta carotene in the carrots, and I would say that consumption of large amounts of raw carrots could cause a temporary discolouration of the skin. Much the same thing as eating raw garlic will make your sweat reek of garlic.

Yes, carrots can make her skin turn orange. I've seen infants brought into my office with this very same problem.
Tell her to cut back on the carrots.

the answer is no if your wife skin is an orange color she needs to go see a doctor and find out why carrots does not affect a person that way vegetables are good for you instead of making fun of her you need to be loving and take her to the doctor

Yes it can make your skin orange.There is an aliment in the carrot and if the element get's in your boold streem that controls your skin color your skin can turn orange.
