Presumably you still have the music files on your computer.
To import a file into iTunes, do one of the following:
Drag a file or folder from the Finder to the iTunes window.
In iTunes, choose File > Add to Library, locate the audio file or folder, and then click Choose.

If they are on your iPod and you want to move them to a new Windows computer, try this:
Before installing iTunes on the new computer, connect the iPod; it will appear as an external drive. You can now copy the songs to your PC. From there, you can then bring them into iTunes without having to rip tham again (once you install iTunes). Have fun.
