The 7 - 11 stores belong to the Thomson's of Dallas Texas. When they first opened their stores the hours of operation was from 7 am untill 11 pm. Now they or open 24 -7 - 365 . By time they became so large and the hours changed the name was already well known, they saw no need to change the name.

It's the hours the original store was open. Way back then, grocery stores opened later and closed earlier. This proved a hardship for some workers at a factory (?). Someone saw an opportunity and opened a small grocery store with limited by basic inventory, and kept it open long hours for the workers. And the rest, as they say, is history. I remember when I saw my first 7-eleven. I think I was in upper grade school.

It is a stupid name, because it means different things depending in which country you are.
In many places in Europe, it means that the shop is open between seven o'clock in the morning to eleven the very same morning. That means four hours.
