I think it's unanimous. Gambit is severly outmatched in this conflict. I tried thinking of a reasonable way for Gambit to win and it can only happen in hand-to-hand combat (no super suit for Stark, no use of energy powers for Gambit). I think Gambit is the better fighter of the two... he needs to be.
With Stark's new healing factor, even this battle would probably swing toward Stark unless Gambit can get in a knockout punch and quickly capitalize on it.
Having said all of this, Iron Man has one fatal flaw (which his healing power has corrected somewhat)... he needs to suit up. There are a number of heroes that have this fatal flaw. The Hulk is another example when he changes back to Banner. In contrast, Gambit carries his powers with him all the time - so in a sense, he has an advantage over many of these fatal flaw characters.

Iron Man would win because he has energy weapons and energy shields. He wouldn't get close to Gambit for the danger that he might charge up his armor. He would stay long-range and shoot at Gambit. If Gambit somehow got enough time to throw something at Iron Man, Iron Man would simply put up an energy shield or deflect it with his repuslors. Iron Man wins hands down.

Concidering how they've recently cheesed out Stark even more.... Remmy just doesn't have a snowball's chance in hell. Aside from the armor's defense and offesive arsenal, Tony stark recently gained a healing factor that rivals Wolverine's and Sabertooth's!
