Human flesh has a strange relation to pork.

I think we are quite similar to the pig.

At least our choromsome 10 and theirs is the same. Also, the result that their organs are also about the size of a human, this means that their genes are supposed to be quite close to us and that is why the organs are about the human size.

Under phylogenetics, it does NOT look like we are that much to pig than monkeys. Maybe about 75-80% close only. I doubt we are much closer than that.

Different animals are used because of their similarity to human organ systems. Pigs have many things in common with us, especially in their digestive tracts and hearts. However, when it comes to forensics, the best thing about pigs is usually that they (and all their organs) are about the same size as us when they reach adulthood. This is great when you want to see how fast they decompose, what a bullet does to a lung when entering from the back, establishing blowfly life cycles for determining time of death, etc.
