Any disturbance that create a pressure difference in the air may make a sound. I say may because the disturbance may be so weak or the frequency too low or too high, its inaudible.
Air inside the balloon has a higher pressure than the outside air. When the balloon explode the high pressure air inside the balloon will push the air around it outward. The air from inside the balloon does not reach your ear, it just pushes the air next to it, then that pushed air push another until the pushing reach your ear. When the push is strong enough to vibrate your eardrum you hear the pop. If not, explode the balloon next to your ear next time! :)

The same way you get a sonic boom when a plane goes through the sound barrier. The sudden release of air and pressure.

the typical balloon sound is made by the movement of the balloon at the exit point - the bang is quick air movement ( like clapping cupped hands )

Its is the rapid movement of air caused by the severe pressure gardient that occurs as the boloon is popping that produce the sound.

Because of the the machenical energy of the air trapped in & of the stretched rubber that is stored in the baloon changes into the sound energy. The air which is trapped in & the Stretched Rubber has lot of energy in it and when we prick it the energy rushes out of it making a change of energy fron one for to another.

Thge air in the baloon is contained under pressure- compressed. When the baloon is pierced, it rapidly releases the pressure. Same effect occurs in a pellet gun.
