first, you can play almost all of them on the ps2 - despite that many are ps1 discs
first FF to play... actually, it really depends on your experience with other games, and their ages (believe it or not, there ARE two age gaps) - i would suggest final fantasy IV for the gba, but for the playstation, i would say final fantasy IX (because psx ff IV wasn't as good on ps as it was on gba)
most people that are 23 or older had other challenging games like lufia II, dragon warrior IV, various MUDs to compare against.
most of them would say that FFVI was the best. it had two compelling, involving stories, an excellent class system (the thief was NEVER a white mage! a berserker could NEVER use black magic! a knight could NOT steal, etc...) - and a magic system that was so great, that square broke it's pattern and copied the magic system for reuse in FFVII
some, myself included, would put final fantasy IV at the top. it had two major storylines. the inner battle of good vs evil, and the outer battle of good vs evil. again, it had set classes, and it was the first game with a working "active time battle" system - in the world of RPGs you no longer "took turns" with the enemy!
-------
in 1996, square started to advertise for FFVII - a game that they spent all of the money they made from the wild success of VI on advertising. they CRAMMED final fantasy VII down our throats. it was on a new platform. it looked pretty (for it's time)
sure, VII didn't have an original storyline, they stole it from contemporary japanese novellas, and they were settled out of court. it didn't have an original magic system, as it copied VI. it didn't have an original battle system, it copied IV. the characters had no background, other than vincent - that was due to a game released in 2006. FFVII was total trash, and let down hundreds of thousands of final fantasy fans. however, younger kids found a game that was simple to beat, and they suddenly thought they knew how to play rpgs. and other companies saw that you could make crappy games and sell them for decent profits. legend of dragoon is a common piece of trash that is a direct result of this.
-------
final fantasy VIII was decent, and went back on the path of introducing new things and new challenges. again, people that don't know how to play RPGs didn't like the change, and hardly gave VIII a chance. it's not a beginner's game though
-------
IX was a great game - the only thing that sucked about it was the very last boss. good story, pretty game, set classes, new magic/learning system, all the good stuff
-------
X went back to the days of VII, in rehashing the old. it was the first game on the ps2 - mostly you'll find 17 year olds and younger like this game the most. i don't know why. it's too easy, to the extent that starting with this game would leave your expectations so low that you could not handle any REAL rpg
======
i hear great things about XII - i bought it today for 29.99, but i never plan on playing it... i don't play with trash

The best FF is on PS1 and that is FFVII. What makes it great it sure isn't the god-awful (by todays standard) graphics. No what makes it unlike any other game you've ever played is its supreme story no game has even engaged me that much. It'll trigger your emotions and blow your mind.
Ok enough with that Since you said PS2 Buy FFX this game is awesome, and the story flows very nicely. XII is good from what I've played so far but it doesnt come close to how awesome X was.

alright lets get to the point,
For the ps1 the best is ff7
For the ps2 the best is number 12
Some ff games that really suck are ff 8, ff 9 is okay, number 10 is cool and is definatly a great choice to warm up to the series, and x-2 sucks butt, it is the worst they have ever come out with,
so try 10 first

In my opinion, the best Final Fantasy wasn't on the ps2. Final Fantasy VIII that came out on the first playstation is the best in my opinion. Although the junctioning system is complicated at first, once you get the hang of it you'll see that it lets you customize your characters better than any other Final Fantasy game. I admit that the story wasn't very good, but the gameplay was awesome.

I would like to think that I am a pretty good source for FF games, as I own all of them in one for or another from FF1 all the way to FF12 which I haven't played yet because it is a Christmas present. (Minus FF11 Because I am playing World of Warcraft, and I am not going to pay for 2 MMORPGs)
Out of all of the FF games I must say that I like FF10 the best. The story was great, visualiszations were superb, gameplay was fun and refreshing, and it was easy enough for the unseasoned RPG player to pick it up and play, but tough enough for the well versed player to have a challenge.
Not to dis FF7, but FF10 was better all around. But the both of them are close in concept to each other. In FF7 you could give everybody the same Materia, and have them all learn the magics and summons. The same can be said for FF10 and its Sphere grid, minus the summons. Alll in all both fantastic games, but FF10 was better sound wise, graphic wise, and story wise.
I will say this though, FF7 does have some wicked cool post game stuff going for it, aka Dirge of Cerebus and Advent Children. If you do manage to find a copy of FF7, do yourself a favor, and pick both the game (Dirge) and the movie (Advent) up and enjoy. They were both great, and gave a little more history of the world for FF7 that Square originally created.
Good Luck and hit lvl 99!!

Final Fantasy VII without a doubt. Nothing will ever top that story line and those characters. And the materia system is genius.
