One explanation (though not based in psychology) is that when we see something we really enjoy or chi (ch-ee, energy in our bodies) builds up and comes out through out palms and we clap to get rid of it.
(one way to feel your chi - put your hands about a dime width apart and move one hand in a very small circle, focus on the space in between your hands. Eventually you'll feel pressure between your hand and can move the energy...it's hard to write that out).

When you clap your hands it is because you saw something you liked. Like can be a synonym for happy.

We do? I thought it was more about social recognition of something, the act of clapping.
p.s. I don't clap my hands when i'm happy, I smile.
It's because of a lack of restraint. That person or child has a hyper personality.

Its called applause.
We give attention and approval by making noise, and we receive attention by making noise.
I think the real reason is, it is a way to dissipate adrenalin while clapping.
Adrenalin:
"A hormone secreted by the adrenal medulla that is released into the bloodstream in response to physical or mental stress, as from fear or injury. It initiates many bodily responses, including the stimulation of heart action and an increase in blood pressure, metabolic rate, and blood glucose concentration."

I've seen infants and toddlers do this, but I haven't clapped from happiness since I can remember. As for infants and toddlers, maybe their parents do it with them when they're playing or cooing together, and the little one imitates the action.
