Oatmeal chocalte chip are the easiest to make. You can make the doe and put it in the refrigerator because the oatmeal will suck up the moisture before the doe does. Plus after you bake them you can put pieces of bread in with the cookies, and cover it with wrap. This will keep them fresher longer. As far as your knee goes the whole santa clause thing is good when there is a parent present.
